Buttercake (Boterkoek, also known as Cholesterol cake) src: Joanne Bouw (adapted by me, Feb 2011) for 24cm diam. shape, bake 15mins at 250C (or gasoven: 6) 250gr flour 200gr soft brown sugar salt 8gr vanilla sugar 225gr butter (the creamier, the better) milk (to glaze the top) - mix the flour with the sugar & salt - cut the butter through the mix with 2 knives - knead all ingredients quickly (keep it cool!) until you get a cohesive ball - push the mix into a 24cm shape with a flat hand - smear milk on the top and use a fork to make a cross pattern - place the shape in the middle of a preheated oven, bake golden brown in about 15mins
